What's Cooking?
I have an incredible sweet tooth. Don't ever believe me when I say I make anything because my kids will like it. I am purely selfish when it comes to sweets. I can't tell you how many times I have made something for them which just happened to be my favorite, not theirs...
With that in mind, and in an effort to fulfill one of the resolutions that LJ refuses to post properly, here is a pie recipe that I made yesterday afternoon. It is a pretty basic recipe but with a twist. And it is disgustingly sweet, sugary and bad for you...
My Pecan Pie
1 Cup sugar
3 eggs
1 Cup dark corn syrup
1 tsp Vanilla
2 Tbsp butter, melted
1 - 1/2 to 2 cups pecans, chopped (I like it nutty so I add more than the usual cup and a half)
Preheat oven to 350°F. Place pie crust in 9" pan. (I used a ready made crust because I was pressed for time). Mix first 5 ingredients with a spoon. Add pecans and stir until coated. Pour in crust and bake approx. 50-55 minutes. I generally brush the edges of the pie crust with water to keep it from burning and will apply foil to protect it at some point. My oven does not bake evenly so I need to turn it as well.
The kicker here, the twist, is that I soaked the pecans in bourbon overnight. It adds that little something that makes it special I think. I've used rum (dark rum) and brandy as well but...well I didn't have any.
So that's it. Enclosing an image of the masterpiece. The edges were fluted when I started but it got a bit wonky in the pan as it cooked. Must have been the bourbon...
